Key lime pie cupcakes

When I came across a recipe for Key lime pie Cupcakes  I knew they would be perfect for my annual summer Luau.  A doctored cake mix recipe makes them super simple and cream cheese frosting swirled on top sprinkled with crushed graham crackers makes it taste like real key lime pie.

For the cake you'll need lime juice (key lime, regular or fresh)
instant lime jello,lemon cake mix with pudding in the mix and ingredients on box for cake mix


In a mixing bowl; blend cake mix and jello until combined.  Then add all ingredients and watch it turn green from the jello. 

The kids like this part!


 Add a few drops of green food coloring for a deeper hue if you're in a funky mood

You didn't think I would add a lime shaped sugar cookie and stop there did you?



Nope! Not me, I placed them on a tray to pass around my party like I was really serving key lime pie martini's at a bar!   But, I forgot to actually serve them. 

I was busy having fun with family and friends.

Key lime Cupcakes


1 box Betty Crocker® SuperMoist® lemon cake mix
1 box (4-serving size) lime-flavored gelatin
3/4 cup water
1/3 cup Key lime juice
1/3 cup vegetable oil
3 eggs
2 or 3 drops green food color, if desired

1.Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix and gelatin with electric mixer on low speed 30 seconds. Add remaining cupcake ingredients. Beat with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes, scraping bowl as necessary. Divide batter evenly among muffin cups, filling each about 2/3 full.


2.Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan to cooling rack.
