Strawberry Shortcake Pie

Okay, so just when I thought I was all "strawberried-out", I decided to make just one more irresistible, easy to make, kid approved dessert featuring; you guessed it....strawberries.  This is a pudding pie if you will, but I like to call it strawberry shortcake pie because it has similar components of the yummy classic dessert itself.   If you are a scratch baker feel free to make your own scrumptious pie crust, pudding and even whip up your own fluffy sweetened whipped cream.  I needed to whip up something quickly for a family BBQ so I opted to use pre-made everything.  That's just how I roll sometimes!




Ladyfingers are the star of the show in this dessert. 


I used this brand. 

Ladyfingers are a classic spongecake that is very popular when making Tiramisu. 




Line bottom of baked and cooled pie crust with ladyfingers.

No tricks...it's that easy..I'm not kidding.  Just plain old dry ladyfingers.



Top ladyfingers with vanilla pudding and sliced berries.  Here is a great scratch recipe if you are THAT kind of gal!  I used a box.  Because that day I was a box kind of girl.

I scratch bake a lot but this time..I was under the gun. 

Had to get going...no  time to mess around.  This had to be quick.



Top with remaining ladyfingers then repeat step above.

I'm twiddling my thumbs here...this is too easy.



Get out the tub of whipped cream and slap some on the top.
Go  ahead and whip some up if you have heavy cream on hand.  I didn't so I used the tub method. 


This is simple eating folks.  It's very easy to get creative with this recipe.  You can use a  graham cracker crust or a different flavor pudding and berries.  The possibilities are endless.  I'm thinking of trying a banana pudding with a chocolate crust and cherries.  Like a banana split.  

Mmmmm!


But who can resist strawberries and whipped cream?



Stop yourself! 

This is so light, it's easy to devour the entire pie in one sitting.  But don't do that. 

 Be nice, and save some for others.

Strawberry Shortcake Pie

1 Pillsbury refrigerated pie crust, softened as directed on box
2 cups sliced fresh strawberries
2 cups of milk
1 8 oz. tub cool whip
1 package (4 serving size) vanilla pudding mix
1 package Ladyfingers


Directions:

1.  Heat oven to 450°F. Bake pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Cool completely, about 30 minutes.

2.  Make pudding as directed on box using 2 cups milk. Let stand to thicken slightly.
3.  Place half of the ladyfingers, cut sides down, on cooled pie crust. Spread half of the pudding over ladyfingers. Top with 1 cup of the sliced strawberries. Place remaining ladyfingers, cut sides down, over strawberries. Top with remaining pudding and remaining 1 cup sliced strawberries. Gently spread whipped topping evenly over top of pie. Refrigerate at least 1 hour until chilled before serving. Garnish with fresh strawberris if desired.
