Phew! It has been a long couple of weeks here at the Buttercream household. My son and daughter celebrated their First Communion this past Saturday and I have been a busy bee in the kitchen getting ready for the after party. I made a lovely dessert bar with all my favorite goodies including chocolate dipped strawberries and pretzels, my famous sugar cookies and of course a cake and cupcakes. I also added Martha Stewarts coconut balls to the mix and they were a hit. They were a chewy, delicate, delight and I'm sure you will enjoy making them as much as you will love eating them. Here is the recipe and tutorial below. I also added some pics of our special day and the dessert bar. Hope you enjoy.
In the bowl of an electric mixer, cream butter with 1/4 cup confectioners' sugar until fluffy
Mix in flour and salt until they're just combined. Stir in coconut.
(that's my three year old's hand pouring the coconut in. He's such a good helper)
Roll dough into 1-inch balls; place 2 inches apart on a baking sheet
Bake until just starting to brown, 15 to 20 minutes. Roll the warm cookies in confectioners' sugar; let cool completely. (recipe below)

This cake was super easy to make. No special pan needed. Cutters used for the Rosary and purchased fondant spray. Even I'm terrible at making fondant flowers look that good...I'm all about easy ladies!

Coconut balls
Makes 36
2 sticks unsalted butter, softened
1/4 cup confectioner's sugar, plus more for dusting
2 cups all-purpose flour
1/4 teaspoon salt
2 cups sweetened flaked coconut
Directions

oh my.................... how sweet. I literally cried with joy to see these beautiful children and the celebration of their First Communion.... how precious. Your pictures are priceless..... OHHHH beautiful. YOU are a wonderful and precious Mother. Your children are so very lucky to have such contribution in their lives. My best to you all and thank you, thank you so much for the recipe. I actually plan on making these tomorrow. I have a hankering for them :)
