While surfing the internet searching for sweet inspirations to try, I came across a website ( I don't remember where) where someone had taken the time to bake candy of various flavors inside cupcakes. I was intrigued and dying to try some myself. So off to the kitchen I went to see how these little gems would REALLY bake up. I chose a basic chocolate cupcake recipe and stuffed a whole Reese's peanut butter cup inside to add a burst of flavor and depth to an already rich and chocolaty cupcake. Not only was it love at first bite but I also became more intrigued to see what else I could sneak inside cupcakes. I think going to be on a I a mission.
Start with your favorite chocolate candy.
I chose my favorite...Reese's peanut butter cups.
Mix up a batch of your favorite cake recipe. I went with
chocolate cake.
Fill cupcake liners with enough batter to cover the bottom.
Fill the rest of the cupcake liner with batter about 3/4 full.
Pop them in the oven and bake them for the time and temperature your recipe indicates.
Then, hope for the best!
I topped mine with peanut butter buttercream and a mini reese's cup.
But, the proof is in the pudding cupcake.
It turned out amazing! Happy Experimenting
Peanut Butter Buttercream
- 1 cup creamy peanut butter
- 4 sticks unsalted butter, softened
- 4 cups confectioners' sugar
- Fine salt (optional)
Directions
- Cream peanut butter and butter in the bowl of an electric mixer fitted with the paddle attachment on high speed. On low speed, mix in sugar until combined, then beat mixture on high speed until fluffy and smooth, about 3 minutes. Add salt to taste, if desired. Use immediately.
Love your spin on these! I did something super similar last weekend. Instead I froze mini's and when my batter had about 5 mins left to cook I put in the mini cups.My fav chocolate cake batter is a bit thin so everything tends to sink. Oh but they turned out fab..Love to try these, I might have to find another thicker chocolate cake recipe though..Thanks for sharing!

ReplyDeleteHeidi and AGM thanks for commenting. My chocolate cake recipe is very thin as well. They immediatly sunk to the bottom but I didn't mind that so much. Mini's would make the cupcake less heavy and for that reason, I may try that next time. I already have an idea for mini cadbury egg cupcakes for Easter.
